"They are perfect - just what I had envisioned.  Besides helping the staff and new hires, this really gives me piece of mind because the chefs cannot hold me hostage with their brains being the only vault with my recipes in them.  At Q. for example, I have three brothers that are the three top line chefs.  If we had a falling out, I could lose all three. ~Roberge
